| Seafood Fideuá (Serves 4) 1/2 Lb Buscatini Rigati (or Spaghetti Noodles) 1 LB Shrimp 2 TBS Butter (divided) 1 LB Bay Scallops 3 Garlic Cloves Finely Chopped 1 Medium Onion Diced 1 Small Yellow Squash Diced 1 Small Zucchini Squash Diced 1 Large Hanover or Slicing Tomato Diced 1 TSP Fresh Basil Finely Chopped 1/2 TSP White Pepper 1/2 TSP Salt 2 TBS White Wine 1 TBS Lemon Juice Prepare the pasta according to label directions, drain, and set aside. Meanwhile steam the shrimp just until done. Peel and set aside. Heat 1 TBS butter over medium heat in a large frying pan. Add the scallops and saute 6-8 minutes or until done. Remove scallops from pan, drain, and combine with shrimp. Add 1/2 TBS butter to frying pan and reduce heat to medium low. Saute garlic and onions 5-6 minutes or until translucent but not browned. Remove from pan and set aside with liquid reserved. Add remaining 1/2 TBS butter to pan and increase heat to medium high. Add yellow and zucchini squash and stir fry 4-5 minutes. Reduce heat to medium and add tomatoes, cooked seafood, cooked onion and garlic, seasonings, wine, and lemon juice to pan. Saute for 5 minutes, stirring occasionally. Remove from heat and serve over pasta. Top with fresh or grated parmesan cheese if desired. |
